here's a healthier, tastier, cheaper version of this kitchen staple + how to video!
what you need:
1C almonds (unroasted, unsalted)
3C water
1/2t vanilla
a few pitted dates, maple syrup or honey (optional, if you like it sweet)
blender
fine mesh strainer
large measuring cup
what to do:
if you have time, soak almonds overnight. this will make for smoother, creamier almond milk.
strain almonds & add to blender with water.
blend on high for a minute or two.
strain through fine mesh strainer. use a spoon to press out the liquid, discarding pulp (or use as body scrub in the shower!)
run almond milk through strainer a couple more times if you want it super smooth.
add back to blender. add vanilla, optional sweetener, blend for a few seconds (i do this step last since i use the pulp as body scrub).
pour in airtight container & keep in fridge.
use in cereal, smoothies, oatmeal, tea, coffee or just sip.
makes 32oz
