Recipe: Super Easy Grilled Romaine Salad

What's more summer than grilling? Absolutely nothing.

But for those of us that aren't very interested in the usual meat line-up & have had enough veggie kabobs for a lifetime, there comes a time when we need to switch it up.

Luckily, I have a solution: it's inexpensive, healthy, quick to make and will please even the most meat-eating BBQ guests.

Say hello to Super Easy Grilled Romaine Salad.

What you need:

2 Heads of Romaine (unless they're huge, then 1 will be fine)

1/2C Olive Oil

3 Cloves of Garlic

Parmesan

Toasted Sliced Almonds

Lemon Juice & Zest


What to do:

Heat up the grill to 350 degrees-ish.

Toast a handful or two of sliced almonds in a dry pan, then set aside in a bowl.

Use that same pan to heat the olive oil, then add minced garlic. Once the garlic has flavored the oil (and before it burns), turn off the heat.

Slice two heads of romaine in half (longways) & brush the oil/garlic mixture onto both sides of each piece.

Throw them on the grill until one side gets a little bit charred, then flip.

Place grilled romaine on a plate, add some shaved parmesan, toasted almonds, a few squeezes of fresh lemon juice & zest.
