Sounds funky, right?

It's actually extremely refreshing and tastes just like pink lemonade. If you're looking for your go-to, thirst-quenching summer drink, this elixir is it.

Here's the nutritional low-down: Purple cabbage packs a seriously healthy punch loaded with vitamin K, C and B6, while watermelon is loaded with vitamin C. Both are anti-inflammatory among a huge list of other great benefits.

What you need:
• 3 cups purple cabbage

• 1/4 of a large seedless watermelon

• 1 lemon

• 1 cup filtered water

Directions:
Cut up cabbage and watermelon.

Peel the lemon.

Throw everything in a Vitamix* (or super high-powered blender of choice). Strain the drink and enjoy.

(Or if you have a juicer, omit the water and juice the rest of the ingredients.)

Voila. You have now been hydrated.

Recipe: Super Easy Grilled Romaine Salad

What's more summer than grilling? Absolutely nothing.

But for those of us that aren't very interested in the usual meat line-up & have had enough veggie kabobs for a lifetime, there comes a time when we need to switch it up.

Luckily, I have a solution: it's inexpensive, healthy, quick to make and will please even the most meat-eating BBQ guests.

Say hello to Super Easy Grilled Romaine Salad.
 

What you need:

2 Heads of Romaine (unless they're huge, then 1 will be fine)

1/2C Olive Oil

3 Cloves of Garlic

Parmesan

Toasted Sliced Almonds

Lemon Juice & Zest


What to do:

Heat up the grill to 350 degrees-ish.

Toast a handful or two of sliced almonds in a dry pan, then set aside in a bowl.

Use that same pan to heat the olive oil, then add minced garlic. Once the garlic has flavored the oil (and before it burns), turn off the heat.

Slice two heads of romaine in half (longways) & brush the oil/garlic mixture onto both sides of each piece.

Throw them on the grill until one side gets a little bit charred, then flip.

Place grilled romaine on a plate, add some shaved parmesan, toasted almonds, a few squeezes of fresh lemon juice & zest.

Enjoy!

Recipe: Cucumber Mint Lime Water

MMM...

This is one of my FAVORITE summer drinks. And of all days in the summer, July 4th would be the day to enjoy it, especially after a few afternoon cocktails in the sun.

This ultra-hydrating drink is perfect for any and all occasions: from the office to the beach.


what you need:

1 Cucumber
2 Limes
1 Big handful mint
Filtered water
Mason jars (1 very large or a few smaller)

what to do:

Slice the cucumber, chop the mint & squeeze the limes into container(s) of choice. Add filtered water. And sip away!

Serves: 1 if you're like me & you just drink it all day long

How To Make The Perfect Green Smoothie

there are really an unlimited number of ways to make a green smoothie. so instead of giving you just one recipe, i'm giving you the steps to build the best tasting & most healthy green smoothie every time. and tailored just to your taste.

1. liquid

water is my go-to, but coconut water or nut milk (try my almond milk or walnut milk) are great also.

2. greens

spinach, swiss chard, romaine & kale are all awesome. mix them up. you can now even get pre-packaged mix of baby kale, swiss chard & spinach which makes it super easy.

3. emulsifier

i pretty much always add a banana. avocado is another option.

4. more veggies

try cucumbers, celery, broccoli, zucchini or just more greens!

3. fruit

apple & pear work really well. also good are pineapple, clementines, mango, grapes, peaches & berries. 

unless i'm using nut milk or almond butter, i ALWAYS add the juice of a lemon or a couple limes.

4. add-ons

try adding chia, flax oil, almond butter, ginger root, turmeric root, raw cacao, an acai packet or herbs like cilantro, parsley or mint. i usually just use common sense to decide whether any of these will taste well with the rest of the smoothie.

my rule of thumb is to have 2/3 ingredients be veggies & 1/3 fruit. if you're new to the green smoothie world, you might want to start with 1/2 and slowly start incorporating more veggies & less fruit. because more veggies are always better!

for example, a 2/3 veggie smoothie might look like this:

2C filtered water
3 handfuls swiss chard
3 handfuls spinach
1 cucumber
handful parsley
1 banana
1 apple
juice of 1 lemon

a slightly fruitier green smoothie might look like this:

2C filtered water
3 handfuls swiss chard
1 cucumber
1 banana
1 apple
juice of 1 lemon

and if you're a true beginner, maybe start with something really easy like this:

1.5C filtered water
3 handfuls spinach
1 banana
1C blueberries

(these each make between 40-60oz which is 2-3 medium servings)

having a high quality blender like a vitamix (WTF is a vitamix?) is really helpful when blending veggies. it's faster, easier & blends more finely which makes your smoothies taste better.

tips: 
- blend the liquid and greens FIRST, then throw everything else in & blend the rest
- spinach is the most easily disguised in taste & texture. newbies might want to start there
- mix up your greens, veggies & fruit to get the max variety of vitamins & minerals
- double the batch so you have one ready for the following day
- make a big batch & freeze a few (ball jars are great, get the jars that are specifically freezer-safe). defrost by placing on kitchen counter while you sleep & it will be ready by morning!

Recipe: Vegan Chocolate Ice Cream

this vegan alternative to ice cream tastes just like the real thing. no f'in joke.

i'm pretty sure you could trick people into thinking it's regular ice cream if you wanted. because it's oh so healthy, enjoy this "dessert" as breakfast or a snack!

 

what you need:

2 frozen bananas
1 packet unsweetened acai
2 heaping spoonfuls of almond butter
1 teaspoon raw cacao
1/4C homemade cashew milk (or any nut milk: almond milk, walnut milk, hemp milk...)

 

what do do:

add all ingredients into vitamix or high-powered blender, slowly adding the nut milk little at a time. you only want to use as much as you need for blades to churn, use blender stick if you have one.

blend until incorporated.

feel free to mix it up by adding fruit, chocolate chips or other toppings.

serves 1-2
